Lust auf gesunde Kekse?
Kekse sind normalerweise ein Mix aus Mehl, Zucker und Fett. Also nicht ideal, wenn man sich gesund und ausgewogen ernähren möchte. Daher habe ich in diesem Rezept alle “ungesunden” Zutaten durch gesunde Alternativen ersetzt.
Zutaten:
120g Mandelmehl (alternativ: Vollkornmehl)
60g Backkakao
1/2 TL Natron
1 großes Ei
100g Erythrit (alternativ: Xylit oder brauer Zucker)
50g Kokosblütenzucker (alternativ: brauner Zucker)
50ml Mandelmilch
1 TL Vanilleextrakt oder Flavdrops
50-100g zuckerfreie Schokodrops
45g Kokosöl
eine Prise Salz
Zubereitung:
Ganz einfach alle Zutaten miteinander vermischen und zum Schluss die Schokodrops unterheben. Anschließend aus dem Teig Bällchen mit einem Durchmesser von 2-2,5cm formen. Der Teig ist superklebrig, daher sind Schokohände vorprogrammiert. Die Bällchen auf ein Backblech geben und mit einer feuchten Gaben etwas plattdrücken. Nach 12-15 Minuten bei 180 Grad im Ofen sind die Kekse fertig. Am besten lasst ihr sie noch auf dem Backblech abkühlen. Ich habe meine noch mit Puderxucker bestreut.

In the mood for some healthy cookies?
Cookies are usually full of flour, sugar and fat. I tried finding healthy alternatives in this recipe. They are super soft and yummy.
Ingredients:
1 cup Almond flour (alternative: whole grain flour)
1/2 tsp Baking soda
3/4 cup Erythrit, packed (alternative: brown sugar)
1/2- 1 1/4 cup Chocolate chips, sugarfree
2/3 cup Cocoa powder
1/4 cup coconut sugar (alternative: brown sugar)
a Pinch of Salt
1 tsp Vanilla
Instruction:
Mix all ingredients and add chocolate chips at the end. Make little 1 inch balls and flatten them with a fork. Don’t worry the dough is very sticky. Bake the cookies at 350° for 12 to 15 Minutes and leave them on the baking sheet to cool for at least 15 minutes.
